Las percepciones de los consumidores de alimentos diferenciados

Abstract

El sector agrícola ha mostrado en los últimos años un comportamiento altamente eficiente en el abastecimiento de alimentos, obteniendo altos rendimientos en sus niveles de producción. Las tecnologías y métodos utilizados en la agricultura en las últimas décadas han cambiado significativamente debido al desarrollo de nuevos conocimientos, mecanización y agroquímicos. Esta mayor eficiencia productiva se ha logrado, en muchos casos generando simultáneamente problemas de erosión, contaminación ambiental y presencia en los alimentos de residuos nocivos para la salud humana. La creciente conciencia del consumidor sobre la seguridad alimentaria está relacionada con los riesgos potenciales asociados a los métodos y tecnologías empleados en la producción y procesamiento de los alimentos. El grado de confianza de los consumidores en las instituciones públicas y privadas responsables de proveer información sobre la calidad de los mismos y la confianza en los diferentes canales o puntos de venta, influyen en esta conciencia y en la percepción que tienen los consumidores de la organización de todo el sistema alimentario. El objetivo del presente estudio es identificar los potenciales consumidores de alimentos orgánicos a partir de las percepciones de riesgo y atributos de calidad de los alimentos. La información utilizada la constituye una encuesta realizada en los principales lugares de venta de alimentos a 301 consumidores de la ciudad de Buenos Aires en abril de 2005. Mediante la aplicación de un Análisis Estadístico Multivariado de Correspondencias Múltiples se exploran las percepciones de calidad de los consumidores de productos diferenciados.
