Demand for local meat by US public schools: An EASI application to Iowa

Abstract

Using the Exact Affine Stone Index (EASI) demand model and USDA Farm-to-School data on Iowa public schools, this paper provides the first set of estimates of public school demand for local beef, pork, and chicken in the United States. We find that public schools are more sensitive to price changes than conventional consumers, and chicken benefits more than beef and pork from an increase in school expenditure on the three types of meat. Using back-of-the-envelope calculations, we conclude that while the economic impact on rural economies is currently minor, it could potentially become significant as the percentage of schools purchasing local meat increases.
