Confiance Et Consommation Alimentaire : De L'Importance De La Confiance Dans Les Emetteurs Des Reducteurs De Risque

Abstract

Les récentes crises alimentaires successives et la montée en puissance des peurs alimentaires ont provoqué une profonde remise en cause de la relation de confiance entre consommateurs et les différents acteurs directs de la filière alimentaire : éleveurs, producteurs, industriels, distributeurs, Institutions Publics et les acteurs indirects : associations de consommateurs, médias. Face à un produit potentiellement risqué, le consommateur, dans sa recherche d'informations pour réduire le risque perçu, doit pouvoir accorder sa confiance à quelque chose ou à quelqu'un. Mais pour accorder sa confiance à un réducteur de risque, le consommateur doit pouvoir accorder sa confiance dans l'émetteur de ce dernier. Mots clés : Consommation alimentaire, risque perçu, confiance orientée vers les partenaires, confiance dans les émetteurs des réducteurs de risque.
