Los atributos de calidad en el consumo de alimentos diferenciados: aplicación de metodologías de evaluación e implicancias de política

Abstract

El presente proyecto de investigación tiene por finalidad seguir avanzando en la línea de investigación relacionada con economía del consumidor, poniendo particular énfasis en los aspectos de calidad como atributo de valor de los alimentos definidos y medidos desde la perspectiva del consumidor. El objetivo general es evaluar la importancia y posición relativa de los atributos de calidad de los alimentos y en una etapa posterior cuantificar la disponibilidad a pagar del consumidor por dichos alimentos. Para analizar el sistema de valores de los consumidores se utilizará el Means-End Chains Analysis (MEC) que permite examinar la importancia adjudicada a los atributos de calidad de los alimentos, vinculados a un conjunto de consecuencias y valores o metas que el consumidor alcanza a través del consumo de estos productos. La información a utilizar en estos modelos serán muestras no probabilísticas, entre las que se encuentran: las convenience samples, los focus groups, las purposeful samples; etc. (Gorfton, 1997; Gutman, 1984), de gran utilidad para: desarrollar hipótesis de trabajo en los inicios de una investigación, identificar ciertos aspectos relevantes del sujeto bajo análisis, definir categorías de respuestas en cuestiones de respuesta múltiple y conducir análisis de datos cualitativos (Schonlau et al, 2002). Finalmente se utilizarán atributos previamente seleccionados y ponderados con el método cualitativo de la etapa anterior para estimar la disposición a comprar y a pagar de los consumidores por estos productos diferenciados en "calidad" o de alto valor.
