Abstract

ILO pub-wep pub. Working paper on appropriate choice of technology for bread baking in Sierra Leone - outlines major types of oven equipment and techniques for bread making, presents an economic analysis of production factors, efficiency and profitability in various firms, and includes comparison of bread technology with other English speaking African countries.
