Les ressorts de l'échange des produits alimentaires différenciés : Des conventions aux communautés ?

Abstract

Le but de ce papier est de partir des différents contenus de la notion d'économie de la qualité pour montrer que, quel que soit le cadre de référence habituellement mobilisé pour analyser les conséquences des signaux de qualité pour les produits alimentaires, l'idée sous-jacente est que ces signaux servent à informer le consommateur sur les caractéristiques des produits. Mais ces cadres théoriques ne semblent pas permettre de comprendre les modalités de coordination mises en œuvre pour l'échange de produits particuliers associés à l'idée de confiance et éventuellement de valeurs communes, que l'on s'intéresse aux produits eux-mêmes ou à l'organisation en tant que telle des échanges. Pour ces objets d'étude, il semble nécessaire de mobiliser d'autres outils, ceux de l'économie de la connaissance dont en particulier la notion de communauté, qui peut aider à comprendre les ressorts de tels échanges spécifiques.
