Have health claims affected demand for fats and meats in Canada?

Abstract

Chronic illness is a global epidemic and places significant economic and social burdens on societies. Research has shown that a healthy diet can be used to mitigate or significantly reduce the risk of many chronic illnesses. Health authorities around the world have begun regulating health claims on foods to encourage the consumption of healthy foods. However, the “ex post” efficacy of health claims regulations on consumers demand for healthy foods has not been assessed. The demand for fats and meats in Canada is estimated using a linear‐approximate almost ideal demand system. The results indicate health claims decreased unhealthy food demand between 1.41% and 7.10% and increased healthy food demand between 1.95% and 8.50%. Les maladies chroniques sont une épidémie mondiale et font peser des charges économiques et sociales importantes sur les sociétés. La recherche a montré qu'une alimentation saine peut être utilisée pour atténuer ou réduire considérablement le risque de nombreuses maladies chroniques. Les autorités sanitaires du monde entier ont commencé à réglementer les allégations santé sur les aliments pour encourager la consommation d'aliments sains. Cependant, l'efficacité «ex post» de la réglementation sur les allégations santé sur la demande des consommateurs en aliments sains n'a pas été évaluée. La demande de matière grasse et de viandes au Canada est estimée à l'aide d'un système de demande linéaire‐de type AIDS. Les résultats indiquent que les allégations santé ont diminué la demande d'aliments malsains entre 1,41% et 7,10% et augmenté la demande d'aliments sains entre 1,95% et 8,50%.
