Arbeitszeiten in der Nahrungsmittelbranche: Alte und neue Herausforderungen der Arbeitszeitregulierung und der Mitbestimmungspraxis der Betriebsräte

Abstract

Obwohl die Nahrungsmittelbranche mit knapp 550.000 Beschäftigten zu den zehn größten Branchen - und den vier größten Industriebranchen - in Deutschland gehört, stellt sie aktuell noch weitgehend eine Black Box innerhalb der (Arbeitszeit-)Forschung dar. Die vorliegende Studie versucht, einen Beitrag zur Schließung dieser Forschungslücke zu liefern, indem sie die Arbeits(zeit)situation in vier Teilbranchen der Nahrungsmittelindustrie sowie dem Hotel- und Gastgewerbe mittels Kurzfallstudien und einer Analyse ausgewählter Tarifverträge untersucht.
