Le risque alimentaire perçu comme risque vital de consommation. Émergences, adaptation et gestion

Abstract

The present article suggests an approach of the food risk which underlines the way the consumption vital risk has to be taken into account, being a present day characteristic of our western society. The comprehensive model considered widens and clarifies the field of possible analysis perspectives, and thus the potential managerial practices. This model springs up out of the standpoints developed by individuals whose opinions are biased by economical, social, cultural, psychological and commercial determining factors. Therefrom a reduction and avoidance strategies dictated by this food vital risk, as well as by social individual and commercial involvements, are analysed.
