Abstract

The aim is to study the demand for organic products and to determine the consumers? willingness-to-pay (WTP) for the organic characteristic. An Almost Ideal Demand System is used to estimate the demand for organic products. We obtain observed data (scanner data) thanks to the co-operation with Auchan distribution group, then we use an indirect valuation method based on invariance situations of the expenditure function to calculate the willingness-to-pay.
