Zukunft der Süßwarenindustrie. Update der Studie der Hans-Böckler-Stiftung aus dem Jahr 2008

Abstract

In diesem Update werden Ergebnisse der Studie "Zukunft der Süßwarenindustrie" aus dem Jahr 2008 mit den aktuellen Daten und Entwicklungen in der Süßwarenindustrie abgeglichen, sowie neue Trends und Entwicklungen zu Markt-, Struktur- und Beschäftigungsentwicklung in der Branche dargestellt.Umsatz und Beschäftigung in der deutschen Süßwarenindustrie sind trotz krisenhafter Entwicklung in Europa in den letzten Jahren stabil geblieben, wobei die Teilbranche "Herstellung von Süßwaren" eine deutlich positivere Entwicklung verzeichnen konnte als die Teilbranchen "Speiseeis" und "Feine Backwaren". Deutschland ist nach wie vor der größte Süßwarenproduzent in der EU. Vor allem steigende Exportanteile in der Teilbranche "Herstellung von Süßwaren" haben zur stabilen Entwicklung beigetragen. Trotz dieser entspannten Entwicklung wachsen die Herausforderungen der Branche u.a. durch die demografische Entwicklung, Nachhaltigkeitsbewusstsein und veränderte Konsummuster sowie eine angespannte Situation auf den Rohstoffmärkten. Gleichzeitig steht die mittelständisch geprägte Süßwarenindustrie in Deutschland weltweit immer größeren Anbietern und Konzentrationsprozessen gegenüber. Die Qualität der Arbeit und der Arbeitsverhältnisse bleibt auch vor dem Hintergrund der demographischen Entwicklung ein Dauerthema der Branche. Für die Branche wird es zukünftig eine der größten Herausforderung sein, trotz eines hohen Grades an Flexibilität und Saisonarbeit gute Arbeitsbedingungen und Entlohnung sowohl für Kernbelegschaften als auch für Saisonkräfte zu gewährleisten.
