Entwicklung und Zukunft der Brauwirtschaft in Deutschland

Abstract

Der Markt für Bierprodukte und die deutsche Brauwirtschaft sind geprägt von einem starken Preis- und Wettbewerbsdruck und einer seit Jahren anhaltenden Absatzkrise infolge eines rückläufigen Bierkonsums (pro Jahr 1-2%). Weder durch die Einführung neuer Bierprodukte noch durch den Export konnte der anhaltend sinkende Absatz bisher kompensiert werden. Die Überkapazitäten steigen, die Automatisierung schreitet voran und betriebliche Strukturanpassungsprozesse (u.a. durch Outsourcing) werden fortgeführt. Als Folge dieser Entwicklung wird sich auch der Arbeitsplatzabbau kontinuierlich fortsetzen. Im Vergleich zur gesamten Ernährungswirtschaft ist die Brauwirtschaft durch einen überdurchschnittlich hohen Anteil älterer Beschäftigter gekennzeichnet, die Verfügbarkeit an jungen Fachkräften sinkt.Der deutsche Biermarkt ist nach wie vor wenig konsolidiert. Sollte es allerdings mittel- bis langfristig zum Zusammenschluss großer Braukonzerne in Deutschland kommen und ein Prozess der Konsolidierung eingeleitet werden, wird dieses zur Schließung zahlreicher Produktionsstätten, einem erheblichen Abbau von Überkapazitäten und einem beschleunigten Personalabbau führen.
