Abstract

Cette recherche étudie les mécanismes d'appropriation d'un produit alimentaire en fonction de son degré d'élaboration. A partir des modes et moyens d'appropriation identifiés dans la littérature, des récits d'expériences narrés par les consommateurs sur des produits plus ou moins élaborés sont analysés. Ils révèlent quatre modes possibles d'appropriation (contrôle, création, connaissance, contamination) pouvant chacun se dérouler de manière séquentielle du pré-achat à la post-consommation selon six séquences. Ces vingt-quatre opérations appropriatives dépendent du degré d'élaboration du produit et présentent autant de leviers d'actions pour les praticiens.
