Contaminación alimentaria: el caso de la panela

Abstract

“La agroindustria panelera ocupa un destacado lugar en la economía nacional, colocándose entre los principales productos de origen agrícola en términos del valor de su producción y de su área cosechada. Por otra parte, la panela suministra cerca del 10% de las calorías consumidas por la población colombiana, siendo superada en este aspecto únicamente por el arroz. Y de acuerdo a su composición, podría estar aportando cerca del 95% del hierro y 30% del calcio requeridos por la población infantil. A pesar de las bondades nutricionales de este alimento, intrínsecas a su composición natural, actualmente se utilizan en su fabricación sustancias que disminuyen su calidad alimenticia (caso del azúcar) o que son francamente nocivas para la salud del consumidor (clarol y anilinas). El objetivo de este artículo es analizar este problema de contaminación alimentaria, que afecta principalmente a la población de menores ingresos – y por ende de mayor fragilidad nutricional- en donde se ubica la mayor parte de los consumidores de panela.”
