Abstract

Der Anspruch auf Nachhaltigkeit betrifft die Lebensmittelwirtschaft in besonderem Maße. Der Lebensmitteleinzelhandel hat dabei eine zentrale Funktion. Durch die Nähe zum Kunden und durch seine starke Position in der Wertschöpfungskette kann der Lebensmittelhandel sozial-ökologische Forderungen an die Hersteller*innen richten und das Einkaufsverhalten der Verbraucher*innen beeinflussen. Zugleich bringen nachhaltige Beschaffungsprozesse vielfach Wettbewerbsvorteile.
