Antakya Kentinin Yemek Kültürüne Bakışı

Abstract

Bu çalışma, Antakya kentinin yemek kültürüne bakışını incelemeyi amaçlamaktadır. İnsan organik bir canlıdır. Hayatta kalmasını besin alması sağlar; yaşamını sürdürebilmesi için yemek yemesi gerekir. İnsanların acıkması ve açlığını gidermek için yemek yemesi genel bir biyokimyasal olay iken, bu açlığı giderme şekli antropolojik ve kültürel bir olgudur. Kültür, insanın kendi için ürettiği yapay bir çevre faktörüdür. Maddi ve manevi yapısıyla bir yaşam biçimi oluşturur ve davranışlarımıza yön verir. Yemek; törenler, dinsel merasimler, düğünler, eğlenceler, ölümler, festivaller ve pek çok sosyolojik davranışın temel olgularından birisi olması nedeniyle, birçok farklı anlam yüklenerek kültürel alana taşınmaktadır. Bu anlamda, günümüzün toplumsal yapılarını yansıtmaktadır. Bunların yanı sıra, yenilen ve içilen şeylerden haz alma ve etkilenmeler konusunda yine her kültürün farklı bir yaklaşım tarzı bulunabilmektedir. Bir toplumda yenilmeyen bir gıda maddesi başka bir toplumda en önemli ağız tadı örneği olabilmektedir. Bu bağlamda, Antakya, yemek kültürü açısından kendine özgü özelliklere sahiptir ve bu kentte yemek gerçek anlamda yaşamı belirlemektedir.
