Abstract

This study evaluated the inhibitory activities of peptide fractions obtained from papain proteolysis of Moringa oleifera seed protein on carbohydrate-hydrolyzing enzymes. M. oleifera seeds were defatted using n-hexane, after which protein was extracted from the resulting seed meal via alkaline solubilization followed by precipitation in acidic medium.
