Abstract

Knowing the history of a food from its origin and production to consumption is increasingly important; in fact, the current trend is to monitor the routes that the food has taken since its origin. The lack of knowledge about good manufacturing practices, as well as the limited availability of complementary technical information, have a negative impact on the handling and preparation of food, both at a family and commercial level.
