Organisation von Wertschöpfungsketten in der Gemüseproduktion: Das Beispiel Spargel

    [Fazit] Die Ausführungen haben deutlich gemacht, dass es sich bei Spargel um eine wichtige Wertschöpfungskette handelt, die für den deutschen Gartenbau in den vergangenen Jahren noch an Bedeutung gewonnen hat. Ein Indikator dafür ist der Zuwachs bei der Anbaufläche, die sich im vergangenen Jahrzehnt in etwa verdoppelt hat. Wie viele andere Wertschöpfungsketten, ist auch die Spargel erzeugende Kette stark arbeitsteilig organisiert. Dementsprechend zahlreich sind die Akteure, die in der Wertschöpfungskette aktiv sind, und die Organisationsfragen, die in Abhängigkeit von den jeweiligen situativen Rahmenbedingungen zu beantworten sind. Eine vertiefte wissenschaftliche Auseinandersetzung mit diesen Organisationsfragen hat bislang nur in Ansätzen stattgefunden. Hier wird ein erheblicher Forschungsbedarf sichtbar, der den Ausgangspunkt für zukünftige Studien bildet.
