La calidad de los alimentos y la implementación de estrategias de regulación: reflexiones a partir de un caso de estudio

Abstract

El objetivo del trabajo es reflexionar acerca de los procesos de regulación de la calidad de los alimentos, focalizando en el caso particular de la producción y comercialización de productos lácteos en Argentina. En nuestro país, el establecimiento de normas privadas permitió que las firmas lácteas pudieran garantizar ciertos niveles de inocuidad y calidad. Ello constituyó un importante instrumento de modelación de la estructura institucional y regulatoria, permitiendo que convergieran las exigencias del segmento del mercado doméstico de alta calidad y los estándares privados internacionales.
