Medición de preferencias por alimentos con atributos ambientales: disposición a pagar por papa fresca integrada

Abstract

El análisis de las preferencias por alimentos con atributos relacionados con la salud y la calidad ambiental depende, en gran parte, de las percepciones de los consumidores. En el caso de productos novedosos, las estrategias de valoración evalúan situaciones de compra hipotética. El trabajo estima una medida de la valoración de un alimento con atributos de calidad ambiental, la papa fresca integrada, aplicando el Método de Valoración Contingente. Los datos provienen de una encuesta probabilística en hogares (Mar del Plata, junio 2009) sobre consumo de papa. Pagando $1,69/kg promedio por papa fresca convencional, se pagaría $2,40/kg para adquirir papa integrada.
