Las regulaciones sobre la calidad de los alimentos en Argentina. Desafíos de política pública y derechos de los consumidores

Abstract

Desde finales del siglo XX, los mercados de alimentos están experimentando cambios significativos que han conferido especial importancia a las regulaciones sobre la calidad de los alimentos. Como ciertos atributos de calidad presentan características de bienes públicos, existiría una justificación para efectuar intervenciones que garanticen el acceso a alimentos diferenciados por parte de un mayor número de consumidores, generando además otros beneficios sociales y ambientales. "Las regulaciones sobre la calidad de los alimentos" evalúa la satisfacción que brinda a los consumidores argentinos el sistema nacional de regulación de alimentos, bajo la hipótesis de que las regulaciones vigentes en el mercado doméstico responden a exigencias establecidas desde los destinos de exportación. A tal fin, se realiza un estudio de caso en el sector lácteo de la Argentina actual.
