La traçabilité comme un standard de production

Abstract

The aim of this article is to show that traceability, initially a means of differentiating products, has now become a production standard, as a result of it having become the prevalent mechanism relied upon by the vast majority of producers to ensure food safety. However, a coordination problem naturally emerges among producers attempting to set such a standard. The question raised here is whether the solutions to this problem can come into conflict with the goal of achieving food safety. The article also explores the effects of a stricter regulation, one that would establish a minimal traceability standard.
