L'influence des structures initiales de production et celle des prix sur l'évolution des systèmes agro-alimentaires

Abstract

Dans une étude consacrée à l'évolution des structures de production dans une coopérative agricole, il a été montré que si l'on prend en compte le caractère aléatoire de l'offre et de la demande de viande bovine, la contribution des différentes catégories d'ateliers à la maximisation de la marge globale ne s'apprécie pas uniquement en fonction de la marge moyenne obtenue par animal, ni en fonction de la dimension des ateliers. D'autres éléments interviennent ; en particulier la contribution de chaque catégorie à l'ajustement d'une demande aléatoire à une offre également aléatoire. Dans la recherche d'un tel équilibre, des ateliers d'assez faible dimension, jouent un rôle non négligeable. Le modèle utilisé montre que certains d'entre eux sont éliminés plus tardivement que les ateliers procurant à leurs propriétaires un revenu suffisant.
