Abstract

Dans l'Union européenne, le marché des édulcorants est étroitement régulé. En particulier, la production d'isoglucose, le principal concurrent du sucre sous quota. Les auteurs développent, dans cet article, une analyse normative du marché des édulcorants en utilisant un modèle de différenciation des produits et les concepts de théorie des jeux. L'objectif est d'analyser quelques effets d'une libéralisation de la production d'isoglucose dans l'Union européenne. Les auteurs montrent que, en Europe, l'isoglucose occuperait sur le marché des édulcorants une place plus faible que celle qu'il occupe aux Etats-Unis. Ils montrent également qu'une telle libéralisation peut accroître le bien-être si elle s'accompagne d'une réduction du niveau des quotas sucriers.
