Shock de precios y vulnerabilidad alimentaria de los hogares peruanos

Abstract

El presente estudio está orientado a cuantificar los efectos económicos del súbito aumento de los precios de alimentos en los hogares peruanos en el período 2007-2008 e identificar a los hogares en situación de vulnerabilidad alimentaria. El estudio se enmarca en una serie de recientes esfuerzos por cuantificar los efectos económicos del pronunciado shock de precios de alimentos ocurrido entre el 2007 y el tercer trimestre del 2008 en diversos países. A diferencia de otros estudios recientes que se centran en pocos alimentos y efectos sobre el gasto alimentario y las líneas de pobreza, en este trabajo usamos el déficit calórico de las familias como indicador central para el análisis del impacto del shock de precios en el caso peruano. Estimamos funciones de demanda de un conjunto de 14 alimentos que significan 76% del consumo calórico de las familias peruanas con un modelo Tobit de elasticidades precio e ingreso variables con respecto al gasto, lo cual permite estimar respuestas diversas por grupos socioeconómicos y, por ende, identificar efectos heterogéneos de acuerdo con el nivel de gasto de los hogares.
