La demanda de carnes en Colombia: un análisis econométrico

Abstract

En el presente documento se estudia la demanda de carne en Colombia. Se evalúan las relaciones de sustitución entre los distintos tipos de carnes y se presenta un análisis de elasticidades-ingreso de la demanda, empleando el “Modelo Casi Ideal” propuesto por Deaton y Muellbauer. Se aborda el tema de la demanda de carnes en forma de un sistema de ecuaciones, abandonando los análisis uniecuacionales que tradicionalmente se han utilizado en el país para la estimación de la demanda de carne de bovinos. De esta manera, se determinan simultáneamente las elasticidades para la demanda de cada uno de los tipos de carne, empleando el método de Zellner. Los resultados muestran que existe una recomposición de la demanda de carne hacia el consumo de pollo. La variable precio es un determinante fundamental en este resultado, al igual que el rápido cambio tecnológico que ocurrió en el sector avícola y la inelasticidad ingreso de la demanda de carne de cerdo y de res. Todo ello ha inducido un rezago relativo en la demanda de estas últimas frente a la carne de pollo.
