Test Your Knowledge: Americans and Food

Abstract

Since 1970, significant changes have occurred in what Americans eat, where they buy their food, and how much they spend for food. For example, the average American consumes less red meat and more poultry and fish than in 1970. The consumption of whole milk, animal fats, and eggs has declined, while use of vegetable fats and oils and cheese has increased. At the same time, Americans have begun to eat out more often and are shopping in upscale "gourmet" foodstores and "no-frills" warehouse stores that offer a large selection and low prices. These and other developments are the result of information about the relationship between diet and health, an increase in the number of two-earner families, shifts in population and demographics, changes in consumer lifestyles, and expansion of the products and services offered. The following 50-question food quiz highlights some of the trends in food consumption, marketing, prices, and expenditures reported in several Economic Research Service publications. This informative quiz is designed to be both entertaining and challenging.
