Abstract

[fre] Dans cet article, les auteurs étudient comment l'adoption, par quelques firmes, de comportements nouveaux, a déstabilisé le segment central de la filière viande bovine française à la fin des années 1960. Ils montrent que les entreprises ayant choisi d'entrer dans des processus de croissance, de capitalisation, et d'innovation-produits ont amélioré leurs performances. Ils envisagent enfin les répercussions de ces changements sur les structures de marché avec le déclin du pôle artisanal et la montée d'un pôle de type industriel relativement concentré. [eng] In this article, the writers study how a lot of new strategies chosen by some firms, changed the stability of french slaughtering, beef processing and wholesale trading sector at the end of the sixties. They show that the firms who have chosen development, capitalization and products-innovation get better performances. They explain the effects of these changements on the market structures. Indeed they involved a progressive decline of small-scale production by crafstmen and emergence of a concentrated and industrial pole.
