La productique dans la filière viande

Abstract

[eng] Using the results of a survey of businessmen, this communication presents an initial report on automation processes in the French meat industry. Restructuring of this industry was part of food industry modernization. Automation accompanied a mutation of production standards. These results permit identification of the future outlook and conditions for success of modernization programs in this industry from an industrial policy perspective. [fre] Cette communication expose une recherche menée par les auteurs sur les processus d'automatisation des systèmes de production dans la filière française de la viande. La restructuration de la filière a été située dans le mouvement général de modernisation des IAA. Dans ce contexte, l'automatisation correspond à une mutation de la norme de production. Un premier bilan de la productique dans la filière viande a été tenté en s'appuyant sur les résultats d'une enquête. Cela permet de dégager l'enjeu et les conditions de réussite des programmes de modernisation dans une optique de politique industrielle.
