Pour une définition des commerces et des marchés alimentaires

Abstract

[eng] The food markets and trade are economic activities which concern only food products directly intended for consumers. They thus differ from similar activities concerning farm products. The definitions given here of the market, the distribution and trade lead us to examine the problems of market structure in the food trade. . The analysis of the food market shows that there are three different levels at the market stage and several distribution channels. A classification of the channels is proposed : direct or integrated channels, short or semi-integrated channels and long non-integrated channels. Is there an actual trend towards shorter channels, towards a « rationalization » ? No precise answer is given to this question but an approach is proposed to estimate trade volumes. . One of the originalities of this paper is to stress the role played by wholesale markets in the food trade. The evolution of wholesale activities is analysed in the framework of wholesale distribution and markets. [fre] Les commerces et les marchés alimentaires sont des activités économiques qui ne concernent que des produits directement destinés à la vente aux consommateurs. Ils diffèrent des activités similaires consacrées aux produits agricoles. Les définitions qui sont données du marché, de la distribution et des commerces permettent d'aborder les questions relatives aux structures de marché dans l'alimentation. . L'analyse du fonctionnement des marchés alimentaires conduit à distinguer trois niveaux de marché et plusieurs types de circuits de distribution. Une typologie de ces circuits est proposée : circuits directs ou intégrés, circuits courts ou semi-intégrés, circuits longs non intégrés. Y a-t-il des tendances au raccourcissement des circuits réels, à leur « rationalisation » ? Sans apporter der réponse précise à cette question, il en est proposé une approche par une évaluation des volumes d'activités. . L'une des originalités de ce texte est de préciser le rôle encore joué par les marchés de gros dans l'alimentation. L'évolution des activités du commerce de gros est relativisée par rapport à l'exercice de la fonction de gros dans la distribution, et par rapport au fonctionnement des marchés de gros.
