Abstract

Este estudio tiene como objetivo estimar las elasticidades de demanda desagregada de nueve productos lácteos para las provincias de Santa Fe y Entre Ríos. Ello se deriva de la utilización de un modelo econométrico tipo LinQuad, que incluye variables económicas y demográficas. Los datos provienen de la Encuesta Nacional de Gastos de Hogares (ENGH) realizada por el Instituto Nacional de Estadísticas y Censos (INDEC). Los resultados ponen relieve diferencias en las elasticidades precio y gasto según productos y gastos totales de los hogares. La comparación de los valores de los coeficientes obtenidos se dificulta por la carencia de trabajos similares para la región / This study aims to estimate disaggregated demand elasticities for nine dairy products in Santa Fe and Entre Ríos provinces. The methodology is derived from the application of an econometric LinQuad model which includes economic as well as demographic variables. The data comes from the National Households Expenditure Survey (ENGH). The results highlight differences for each dairy product’s price and expenditure elasticities. Comparison of our results is limited by the scarcity of similar studies for the region.
