Anforderungen der Verbraucher an die Nahrungsmittelqualität : ein Vergleich zwischen West- und Ostdeutschland

Abstract

Die Konsumgewohnheiten in den neuen Bundesländern werden sich wohl in dem Maße, in dem es die Einkommensverhältnisse erlauben, den westdeutschen Standarts anpassen. Am Beispiel Fleisch wird gezeigt, daß sich das Verbraucherverhalten in Ostdeutschland seit Inkrafttreten der Wirtschafts- und Währungsunion zwar schon etwas an die Verhältnisse in den alten Ländern angenähert hat, daß aber doch beim Einkauf noch nicht die gleichen Kriterien maßgeblich sind. Mit wachsender Kaufkraft wird sich das ostdeutsche Kauf- und Ernährungsverhalten weiter verändern, so ist zum Beispiel mit einer stärkeren Durchsetzung des "Qualitätstrends" zu rechnen, das Markenbewußtsein wird sich weiter ausprägen, Lebensmittel mit Convenience-Charakter werden stärker nachgefragt werden, und der Außer-Haus-Verzehr wird vor allem in der Fast-Food-bzw. Systemgastronomie an Bedeutung gewinnen.
