Nahrungsmittelhandwerk : mit Qualität und Angebotsvielfalt gegen Niedrigpreiskonkurrenz

Abstract

Im Bäckerhandwerk in Bayern findet zur Zeit ein starker Strukturwandel statt. Auf der Angebotsseite des Brot- und Backwarenmarktes gibt es drei beteiligte Gruppen: das Bäcker- und Konditorenhandwerk, die Brot- und Backwarenindustrie und der Lebensmittelhandel. Die Brot- und Backwarenindustrie versucht durch mehr Qualität, Vielfalt und Frische, dem Bäckerhandwerk auf der Produktionsebene Marktanteile abzunehmen. Auf dieser Ebene konnte es den Marktanteil auch halten, auf der Einzelhandelsstufe gewann allerdings der Lebensmitteleinzelhandel zunehmend an Bedeutung. Der Trend in Zukunft geht von der Produktions- zur Kundenorientierung. Der Einfluß des Europäischen Binnenmarktes ist in Bayern weniger gravierend und wird sich höchstens bei Tiefkühlware (Teigwaren) bemerkbar machen. Auch beim bayerischen Fleischerhandwerk findet ein Strukturwandel, verbunden mit sinkenden Umsätzen, statt. (Für 1989 ein Rückgang des Fleischverzehrs um ca. 3,3%). Konkurrenten sind private Groß- und Versandschlächter, Fleischhandel, Fleischwarenindustrie sowie der Nahrungs- und Genußmittelhandel. Durch den EG-Binnenmarkt wird die Internationalisierung des Fleisch- und Fleischwarenangebotes noch größer werden. Um dem Wettbewerb zu begegnen, muß sich das Fleischerhandwerk vor allem auf Anhebung des Qualitätsstandards und die Kundenwünsche nach Spezialitäten und Convenience-Produkten einstellen.
