Transition vers des systèmes agricole et agroalimentaire durables : quelle place et qualification pour les légumineuses à graines ?

Abstract

Based on evolutionary theories, this article presents a historical analysis of the agrifood system lock-in to the detriment of grain-legumes. Several self-reinforcing mechanisms explain why those species are less cultivated in France, facing an industrial agrifood system that was specializing over time in favour of cereals and the use of synthetic fertilizers; and that limited the investments for grain-legumes in food. This article then examines the perspectives to un-lock.
