Management Von Qualitätsdaten - Eine Empirische Analyse In Wertschöpfungsketten Der Ökologisch Wirtschaftenden Schweinebetriebe In Deutschland

Abstract

Forderungen nach mehr Qualität und Sicherheit von Lebensmitteln nehmen nach wie vor starken Einfluss auf das Marktgeschehen. Auch die Erzeugung von ökologischen Schweinefleischprodukten ist durch die harmonisierte EU-Gesetzgebung davon betroffen. Nicht nur die EU-ÖKO-VO 834/2007, sondern auch weitere, in den vergangenen Jahren umfangreicher gewordene gesetzlichen Anforderungen an die Produktion von Lebensmitteln, wie z.B. das Lebensmittelhygienepaket (EU VO 852/2004, 853/2004 und 854/2004), stellen nicht nur die konventionellen Betriebe vor neue Herausforderungen. Mit den kontinuierlich zunehmenden Qualitätsanforderungen gehen verbindliche Dokumentationsverpflichtungen einher. Die zusätzlich stetig ansteigenden Datenmengen entlang der Wertschöpfungskette führen zudem zu einer zunehmenden Komplexität in der Datenauswertung und Informationsselektion. Nur durch ein effizientes Management der Daten, im Sinne der Aufbereitung zielführender Informationen, kann diesen Entwicklungen begegnet werden. Das Ziel dieser Studie ist es durch effizientere Datennutzung einen Beitrag für höhere Standards in der Lebensmittelsicherheit zu leisten. Realisiert wird dies durch eine Status quo Analyse des Informationsmanagements in deutschen, ökologisch produzierenden schweinehaltenden Betrieben. An dessen Ende steht die Erarbeitung eines Konzeptes zur Verbesserung des überbetrieblichen Informationsmanagements in Ketten der ökologischen Schweinefleischerzeugung.
