Qualitätssicherungssysteme in der europäischen Agri-Food Chain: eine Rückblick auf das letzte Jahrzehnt

Abstract

Die europäische Lebensmittelwirtschaft hat in den letzten 10 Jahren eine Reihe kleinerer und größerer Krisen durchgemacht, die das Qualitätsverständnis der Branche entscheidend verändert haben. Es wurden zahlreiche Food-Safety-Initiativen gestartet, die u. a. zu einer immer stärkeren Verbreitung von Zertifizierungssystemen geführt haben (Theuvsen et al. 2007; Jahn 2005a; Hobbs et al. 2002). Fast flächendeckend wird heute in Europa der Einsatz von Konzepten wie GLOBALGAP, British Retail Consortium (BRC) oder International Food Standard (IFS) vorangetrieben, in denen neutrale Kontrollunternehmen (Zertifizierer) auf Basis eines anerkannten Standards Lieferanten überprüfen. Dies betrifft die gesamte Wertschöpfungskette - von der Futtermittelproduktion bis zum Lebensmitteleinzelhandel. Zunehmend werden die Konzepte auch auf Zulieferer aus anderen Kontinenten (z. B. Südamerika, Asien) ausgedehnt. Europa bildet hierbei den Ausgangspunkt einer "Zertifizierungswelle", die zum Aufbau eines weit reichenden Netzwerkes geführt hat...
