Abstract

Aneka olahan berbahan baku kacang kedelai disuatu daerah melalui penerapan teknologi tepat guna, memungkinkan masyarakat untuk memilih dan mengkonsumsi pangan yang semakin beragam. Hal ini dapat mendukung ketahanan pangan, kecukupan gizi bagi masyarakat serta membuka peluang berwirausaha. Salah satu olahan kedelai yang di gemari oleh masyarakat yaitu tahu. Tahu merupakan makanan yang berasal dari Cina yang pertama kali ditemukan oleh Liu An pada tahun 164 SM. Tahu mempunyai rasa segar, berwarna putih atau kuning (jika diberi warna) dengan tekstur lembut dan lembek serta mempunyai daya cerna yang tinggi (Rukmana dan Herdi, 2014: 124) Menurut Sarwono dan Saragih (2001: 5), tahu diperdagangkan dengan berbagai variasi bentuk, ukuran dan nama. Selain tahu putih atau tahu biasa, di pasar juga dikenal berbagai tahu komersial yang memiliki nama dan berciri khas, misalnya tahu Sumedang, tahu Bandung, tahu Cina, tahu kuning, tahu takwa, maupun tahu sutera.
