Abstract

Penelitian tentang “Pengolahan Biji Nangka menjadi Inovasi Pangan Kaya Rasa“ dilaksanakan karena terjadi permasalahan yang ditimbulkan karena keberadaan limbah biji nangka di lingkungan masyarakat. Selain untuk mengatasi limbah yang berserakan, penelitian ini juga bertujuan untuk menghasilkan produk inovasi pangan. Biji nangka yang kaya nutrisi sangat bagus untuk kesehatan manusia. Biji nangka mengandung gizi yang sangat banyak antara lain karbohidrat, protein, lemak, fosfor, besi, kalsium, vitamin A, vitamin B, dan vitamin C. Dalam melaksanakan penelitian ini, metode yang digunakan yaitu metode studi pustaka, metode observasi dan wawancara, dan metode eksperimen. Percobaan ini menghasilkan tiga produk pangan yaitu, susu, kue, dan jenang dodol.
