Abstract

Bisnis makanan keju kraft merupakan pelopor keju olahan yang berbasis di Amerika Serikat mengalami kenaikan (rise) bahkan di masa pandemic COVID-19. Namun bisnis keju kraft tidak berjalan dengan lancar, ada moment bisnis ini mengalami penurunan (fall). Studi ini bertujuan untuk mengetahui alasan penurunan (fall) dan kenaikan (rise) pada bisnis keju kraft. Studi ini menggunakan studi kasus jamak pada bisnis keju kraft yang bergerak di bidang makanan dengan analisis business model canvas, business pattern, business environment & value proposition canvas. Bisnis keju kraft pernah tren pertumbuhan dan sukses karena memiliki value proposition pelopor keju olahan (tahan lama) pertama didunia dan pemegang hak paten keju olahan. Namun, bisnis keju kraft mengalami penurunan karena customer relationships kurang merespon dengan cepat keinginan konsumen (perihal bahan apa yang konsumen inginkan). Studi merekomendasikan key activities pada production keju olahan, platform/network, swalayan dan toko bahan panganan.
