Analisis Model Bisnis Restoran TGI Fridays

Abstract

Bisnis restoran TGI Fridays di Amerika Serikat ada di mana-mana mengalami kenaikan (rise). Namun sejak tahun 2008, industri kuliner ini mengalami tren penurunan (fall). Studi ini bertujuan untuk mengetahui alasan penurunan (fall) dan kenaikan (rise) pada bisnis restoran TGI Fridays. Studi ini menggunakan studi kasus jamak pada bisnis restoran TGI Fridays yang bergerak di bidang kuliner dengan analisis business model canvas, business pattern, business environment & value proposition canvas. Bisnis kuliner ini pernah tren pertumbuhan dan sukses karena memiliki value proposition menu makanan selalu berubah. Namun, bisnis kuliner ini mengalami penurunan karena customer segment konsep casual dining yang kurang menarik bagi konsumen. Studi merekomendasikan key activities dan customer relationship membuka cabang baru, research dan development menu baru.
