Determinación de parámetros que explican el consumo de carne en Mar del Plata

Abstract

Dada la importancia que tiene la carne, especialmente la vacuna, en los hábitos alimenticios de la población argentina, el objetivo de este trabajo es analizar el gasto de las familias marplatenses en dicho producto y las preferencias de sus integrantes según las edades. A tal fin se estimaron funciones de Engel (relacionando el gasto en los distintos tipos de carne, el gasto total y las edades de los miembros del hogar) y se calcularon elasticidades-gasto, para diferentes estratos socio-económicos. Los datos que se emplearon provienen de la Encuesta Nacional de Gastos de los Hogares, la cual fue realizada por el INDEC entre 1996 y 1997; la muestra final, para el área Mar del Plata-Batán, comprendió 580 hogares. Entre los principales resultados a los que se arribó, es de destacar que al variar el gasto total, el gasto en carne varía pero menos que proporcionalmente en casi todos los productos cárnicos considerados.
