Conocimiento y valoración de trazabilidad por parte de consumidores de alimentos pesqueros del Partido de General Pueyrredon

Abstract

El objetivo del trabajo es evaluar el conocimiento y la valoración de los consumidores respecto a la trazabilidad de alimentos pesqueros (AP). A tal fin, se analizan descriptivamente datos provenientes de una encuesta a 260 consumidores de AP, residentes del Partido de General Pueyrredon (PGP). Los principales resultados indican que 116 encuestados declaran saber qué es la trazabilidad y la asocian con el seguimiento del alimento en todo su procesamiento. Se destaca la tecnología de identificación automática y captura de datos -código QR- como herramienta para informarse sobre trazabilidad y la disposición a pagar (DAP) un monto no demasiado elevado por la misma.
