Conociendo sobre el café de especialidad

Abstract

La globalización de los mercados agroalimentarios ha facilitado el acceso a productos novedosos, con calidad diferenciada. Así, el denomina do "nuevo consumidor" exige inocuidad, pero, también, valora aquellos atributos sensoriales, funcionales y simbólicos que potencien su experiencia de consumo. En los últimos tiempos, en el mercado nacional y, particularmente, en el marplatense, se destaca el "café de especialidad" (CE). Dicho término fue empleado por primera vez en el Congreso Internacional del Café, celebrado en Francia, en el año 1978, haciendo alusión a un producto con sabor y aroma característicos, propios de regiones con determinados suelos y climas. El auge de dicho producto coincide con el nacimiento de la "tercera ola" del café, a principios de este milenio, cuyo eje es un cuidadoso tratamiento en toda la cadena, con trazabilidad y sustentabilidad, a fin de lograr una calidad de excelencia.
