Trazabilidad sobre blockchain. Hacia la transformación digital de la industria pesquera

Abstract

La globalización ha promovido la generación de nuevos requerimientos en los consumidores del mercado alimentario, llevando a las empresas a disponer de un producto de calidad con garantías de seguridad frente a los posibles riesgos sanitarios que conlleva su producción. Para las empresas del sector pesquero, la trazabilidad se constituye en un vehículo para ofrecer mayores señales al consumidor sobre la calidad del producto, sin embargo, su valorización aún resulta escasa. El posicionamiento actual de la tecnología blockchain puede colaborar para promocionar este atributo extrínseco del producto, dotándolo de mayor transparencia y visibilidad. Se abordó un estudio cualitativo, exploratorio, en empresas pesqueras marplatenses durante el 2020, para reconocer el entorno tecnológico de la trazabilidad en la cooperación de agentes y la provisión de información al consumidor como preámbulo para el desarrollo de la industria 4.0. Se reveló una adopción incipiente de tecnologías de gestión sin extensión a las áreas productivas.
