Aceptación de un nuevo alimento de conveniencia a base de merluza

Abstract

El objetivo general del presente trabajo es explorar la aceptación de un nuevo alimento pesquero de conveniencia, elaborado con merluza, "listo para cocinar", por parte de los residentes del Partido de General Pueyrredon (PGP). A tal fin, se analizan datos primarios, proporcionados por una encuesta diseñada al efecto, que incluye el Método de Valoración Contingente. Dicha encuesta fue relevada durante los meses de enero a marzo del año 2022, participando consumidores y no consumidores de pescados y mariscos (PyM). La fundamentación conceptual es la teoría microeconómica de la demanda basada en los atributos de calidad del producto y en el enfoque de la calidad orientada a los consumidores. Se presentan resultados sobre cuestiones vinculadas a alimentos pesqueros procesados en general y disposición a pagar (DAP) por el nuevo alimento pesquero en particular, considerando variables demográficas y socioeconómicas. Previamente, se hace referencia a aspectos del consumo de PyM.
