Caracterización del consumo interno de productos pesqueros con origen en Mar del Plata

Abstract

Del análisis comparativo con los resultados del estudio realizado por Errazti et al. (1995), surge que la población no ha cambiado significativamente sus hábitos de consumo de pescado; y al comparar las frecuencias de consumo con los distintos niveles de ingreso, se considera que la relación encontrada es óptima. Pese a que la población manifiesta que el precio del pescado resulta caro para su presupuesto la frecuencia de consumo no disminuyó, lo que revela que los productos pesqueros ya están incorporados a la canasta de alimentos. La población sigue manteniendo su preferencia por los productos frescos, cualquiera sea su nivel de ingreso y el filet de merluza sigue siendo el producto más consumido por todos los estratos de ingresos.
