Aplicación del alpha de Cronbach. Medición de la calidad percibida de alimentos diferenciados

Abstract

Según diversos autores, los consumidores evalúan la calidad de un alimento en base a sus percepciones, necesidades y objetivos. En esta línea, el Enfoque de Calidad Percibida establece que la calidad es esencialmente definida por el individuo y, por ende, no es fácil de medir. Al estudiar las preferencias de los consumidores por alimentos de calidad diferenciada, a través de encuestas, se debe investigar la confiabilidad de los resultados obtenidos. El Método de Consistencia Interna permite estimar la confiabilidad de un proceso de medición o de los resultados, cuando se emplea un conjunto de ítems con el propósito de medir un concepto latente. Dentro de esta perspectiva, el Coeficiente Alpha de Cronbach es una medida de confiabilidad; la misma depende de la cantidad de ítems que intervienen y de las varianzas involucradas. El objetivo general de este trabajo es proponer una reflexión acerca del significado, la interpretación y los alcances del Coeficiente Alpha. Primero, se realiza una revisión bibliográfica sobre dicho Coeficiente. Luego, se presenta una aplicación del mismo, explorando la medición de la calidad percibida -variable latente- por los consumidores en relación a determinados atributos -ítems- de una papa fresca obtenida con un uso mínimo y racional de agroquímicos -papa integrada-. El estudio empírico se lleva a cabo empleando datos provenientes de una encuesta a 500 hogares consumidores de papa, relevada en la ciudad de Mar del Plata-Argentina, durante el mes de junio del año 2009, empleando diversos softwares, especialmente el ViSta. Respecto a la percepción del riesgo que para la salud implican ciertas sustancias químicas en las papas, la misma se encontraría medida por el contenido de pesticidas, de fertilizantes y de aditivos y conservantes, dado que se obtuvo un Alpha de Cronbach igual a 0,80 -valor considerado por la literatura especializada como indicador de consistencia interna-.
