Perfil de la cadena productiva ostrícola de la Provincia de Buenos Aires

Abstract

En las localidades de San Blas y Los Pocitos pertenecientes al Partido de Patagones, provincia de Buenos Aires, se desarrolla, a partir del año 1999, la actividad de recolección y cultivo de ostra cóncava (Crassostrea gigas). La ostricultura está compuesta por distintos eslabones que forman un proceso económico, el cual comienza con la semilla y llega hasta la distribución del producto terminado. En este trabajo, se presenta la caracterización del sector ostricultor a través de su cadena productiva, con el objetivo de visualizar la organización total del mismo y determinar los puntos críticos que obstaculizan el desarrollo de la actividad. Para la toma de información, se realizaron encuestas y entrevistas en profundidad a los distintos actores del sector. La ostricultura puede convertirse en una alternativa complementaria de desarrollo socioeconómico para estas localidades. Sin embargo, la actividad presenta problemas en su cadena productiva que retardan su crecimiento y consolidación.
