Abstract

Why do some firms adopt food safety standards, while others comply only with government regulations? This article argues that among the parameters companies consider is consumer behavior in the event of a health crisis. Drawing on simple game theory concepts, we propose an analysis that explains the role of consumer profiles and corporate doctrine in their decision-making and in the emergence of food safety standards.
